And I don't mean album cover but you are welcome to state your opinions on that as well if you like.

Here is my vote:

Manfred Mann's Earth Band "Blinded by the Light" originally recorded by Bruce Springsteen.
 
Quiet Riot's "Cum on Feel the Noise" which is much funnier than the original version recorded by Slade.

I love Boz Scaggs version of My Funny Valentine on Japanese import cd only of But Beautiful. More a standard than a true cover.

One of the better covers is the version used in Ghost by Bill Medley's of Al Hibbler's or Roy Johnson's 1955 hit of "Unchained Melody".
 
Joe Cocker's version of With a Little Help from my Friends. Normally I'm not of fan of cover songs in general and covers of the Beatles in particular, but Cocker's version slays the original.
